We work with a network of local, as well as international producers, growers and distributors to obtain fresh top quality ingredients. Our role is to ensure that all of our suppliers, here and abroad, respect our high standards that aim to deliver top quality, freshness, flavor and texture for our customers.

Ginger is a perennial plant of which we eat the root. Its’ strong odor is due to the highly volatile compounds it contains. It is known for its tonic and stimulating qualities. In small doses, ginger stimulates the taste buds. It is also recommended to eat a little piece of ginger between sushi to prepare the palate for the next bite.


Wasabi

Wasabi is a green paste that is prepared with the root part of the Japanese wasabi plant. It can be compared to a type of mustard because of its strong taste. Wasabi, also known as Japanese horseradish, is known for its antiseptic qualities and is used to enhance taste. It is usually diluted in soy sauce as an accompaniment to sushi.
